  • 1.2 kg pork shoulder, cubed
  • 2 hojas de laurel
  • 1 tbsp salt (for braising)
  • Water to cover meat
  • 6 chiles guajillo, stemmed and seeded
  • 2 chiles ancho, stemmed and seeded
  • 1 small white onion
  • 3 cloves garlic
  • 2 medium corn tortillas
  • 1 large orange (juice + a strip of peel)
  • 1 small piece piloncillo (~2 tbsp grated)
  • 1 small piece dark chocolate (~2 tbsp grated)
  • 1/2 tsp cumin seeds
  • 1 canela stick
  • 1 tsp black peppercorns
  • 3 cloves
  • 2 cups water (for sauce)
  • Salt to taste
  • Arroz rojo, frijoles puercos and warm tortillas, to serve
