1 Ingredients
- 2 lb pork belly, seasoned with salt
- ~2 tbsp lard
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 oranges, juiced
- 1 stick cinnamon
- 2 bay leaves
- ~1 tsp chiltepín
- ~1 tsp salt
- 8 corn tortillas, toasted
- 2 green onions, grilled
- ~2 tbsp lime juice
- ~2 tbsp soy sauce
- 1 can Coca-Cola
- 1 avocado, sliced or mashed

In a large pot, heat ~2 tbsp of lard over medium heat until melted.

Add the seasoned pork belly, chopped onion, and minced garlic to the pot.

Pour in the juice of 2 oranges, and add the stick of cinnamon and bay leaves.

Sprinkle in ~1 tsp of chiltepín and ~1 tsp of salt.

Pour in 1 can of Coca-Cola to caramelize the meat.

Cook on low heat for about 3 hours, until the meat is tender and golden.

Once cooked, remove the meat from the pot and shred it.

In a separate pan, toast the corn tortillas until slightly charred.

Assemble the tacos by spreading a layer of avocado, adding the carnitas, and topping with grilled green onions.

Drizzle with ~2 tbsp of lime juice and ~2 tbsp of soy sauce before serving.
