Tripitas Tacos

   Preheat the grill to medium heat.

   Place the cleaned beef tripe on the grill and cook slowly, turning occasionally, until crispy and golden brown, about 15-20 minutes.

   While the tripas are grilling, prepare the corn tortillas on a hot comal until they are warm and slightly charred.

   Once the tripitas are crispy, squeeze lime juice over them.

   Assemble the tacos by placing crispy tripitas on the warm tortillas.

   Top with guacamole, salsa, and chopped green onions.

   Finish with a sprinkle of salt and serve with cold beer.
