Gambón Carpaccio

   Step 1: Peel the shrimp and remove the intestines. Rinse them in ice water and dry.

   Step 2: Place the shrimp between plastic wrap, flatten them, and freeze for 30 minutes.

   Step 3: In a medium pan over medium heat, sauté the minced garlic until golden.

   Step 4: Add the shrimp heads to the pan, crush them, and let the liquid reduce.

   Step 5: Strain the mixture through a colander to collect the liquid.

   Step 6: Stir in the sweet paprika, salt, and emulsify with olive oil.

   Step 7: Remove the carpaccio from the freezer, plate it, drizzle with the dressing, and finish with lime zest and juice.
