  • 4 large tlayuda tortillas (about 30 cm diameter)
  • 200 g asiento de cerdo (pork lard with chicharrón scrapings)
  • 2 cups frijol negro paste, refried
  • 500 g quesillo (queso Oaxaca), hand-shredded
  • 400 g tasajo (thin-sliced dried beef), cecina or chorizo
  • 1 cup finely shredded cabbage
  • 2 ripe tomatoes, sliced
  • 1 avocado, sliced
  • Salsa de molcajete, to serve
  • Chepiche or hoja santa leaves (optional)
