  • 4 medium potatoes, peeled
  • 8 whole cloves
  • 200 g chorizo de cerdo, casing removed
  • 1 cup manteca de cerdo (or cooking oil)
  • 8 pambazo rolls (or telera/bolillo if unavailable)
  • 10 dried chiles guajillo, stemmed and seeded
  • 1 garlic clove
  • 1 tbsp salt
  • 1 head romaine lettuce, finely shredded
  • 1/2 cup Mexican crema
  • Queso cotija or queso fresco, crumbled, to serve
  • Salsa verde cruda, to serve
