- 8 whole cloves
- 200 g chorizo de cerdo, casing removed
- 1 cup manteca de cerdo (or cooking oil)
- 8 pambazo rolls (or telera/bolillo if unavailable)
- 10 dried chiles guajillo, stemmed and seeded
- 1 garlic clove
- 1 tbsp salt
- 1 head romaine lettuce, finely shredded
- 1/2 cup Mexican crema
- Queso cotija or queso fresco, crumbled, to serve
- Salsa verde cruda, to serve
