  • 3 medium potatoes, peeled
  • 1 litre water (for boiling)
  • 1/2 can leche evaporada (evaporated milk), about 175 ml
  • 1 cube chicken bouillon (consomé de pollo en polvo)
  • 12 corn tortillas
  • 1/2 cup corn oil, for frying
  • Media crema (Mexican table cream), cold, to serve
  • 1 cup romaine lettuce, sliced into thin ribbons
  • 1/3 cup queso panela, grated or crumbled
  • Salsa roja or salsa verde, to serve
