Tacos de Camarón Estilo Gobernador
Born at the restaurant Los Arcos in Mazatlán, Sinaloa, in the 1990s when chef and owner created them for a visiting state governor — who liked them so much they kept his title. Shrimp sautéed with poblano and onion, blanketed in melted manchego inside a griddled tortilla. Half quesadilla, half taco, all coastal Sinaloa.

- 1 tbsp butter
- 1/2 white onion, finely chopped
- 1 chile poblano, roasted, peeled, deseeded, and cut into thin strips (rajas)
- 16 medium shrimp, peeled, deveined, and roughly chopped
- 1/2 tbsp dried oregano
- 1 pinch flor de sal
- 1 pinch black pepper
- 1 cup queso manchego, grated
- 8 corn tortillas
- 2 cups frijoles negros refritos, to serve
- 1 avocado, sliced, to serve
- Salsa roja, to taste
