The signature antojito of the Yucatán: a small masa tortilla stuffed inside its puffed pocket with refried frijol negro, fried crisp, then crowned with slow-braised cochinita pibil, tangy pickled red onion and habanero salsa. One of director Guillermo del Toro's favorite dishes.

1 Ingredients
- 1 kg pork leg, in medium chunks
- 60 g achiote paste
- 1/4 onion, in chunks
- 2 garlic cloves
- 4 allspice berries (pimienta gorda)
- 1 tsp cumin
- 2 cloves
- 1 1/2 cups orange juice
- 1/4 cup white vinegar
- 1 cup water
- 2 tsp salt
- Banana leaves for wrapping (optional, traditional)
- 1 tbsp manteca de cerdo
- 1/4 onion, finely chopped
- 1 tbsp epazote, chopped
- 2 cups frijol negro, cooked and blended
- Salt to taste
- 500 g fresh masa de maíz
- 1 tsp salt (for masa)
- 1/2 tsp baking powder
- 1/2 cup water
- 1/4 cup manteca de cerdo (for frying)
- 1 cup pickled red onion (cebolla morada encurtida)
- 1/2 cup habanero salsa
