Ceviche de Jaiba
A Gulf coast classic from Veracruz and Tampico — sweet shredded jaiba (blue crab) mixed with tomato, cucumber, jalapeño and lime. No cooking needed; the crab is already cooked, the lime just brightens it. Eaten by the spoonful on tostadas with a squeeze of mayo and a splash of hot sauce.

- 500g jaiba meat (blue crab), cooked and shredded
- 1/2 cup lime juice
- 1 cup Roma tomatoes, diced
- 1/2 cup cucumber, diced (seeds removed)
- 1/4 cup red onion, finely diced
- 1 jalapeño, deveined and finely minced
- 1/4 cup fresh cilantro, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp Clamato (optional, for extra depth)
- 1 avocado, sliced
- Tostadas and mayonnaise, to serve
