Mazatlán's ceviche made with smoked marlin — shredded, briefly soaked in lime, then mixed with tomato, carrot, onion, oregano and a splash of ketchup and Huichol. Smoky, tangy, hearty. Eaten on tostadas with mayo and an ice-cold beer.

Ceviche de Marlín Ahumado (Mazatlán Style)

1 Ingredients

  • 500g smoked marlin, shredded (discard the dark, reddish parts)
  • Juice of 10 limes
  • 1 red onion, half diced finely, half cut into wedges
  • 4 Roma tomatoes, cut into wedges
  • 4 carrots, peeled and grated
  • 1/2 bunch cilantro, chopped
  • 2-3 tbsp ketchup (less-sweet variety)
  • Drizzle of olive oil
  • Huichol sauce or other hot sauce, to taste
  • Salt, black pepper, dried oregano
  • 2 ripe avocados, diced
  • Tostadas and mayonnaise, to serve
