Mazatlán's ceviche made with smoked marlin — shredded, briefly soaked in lime, then mixed with tomato, carrot, onion, oregano and a splash of ketchup and Huichol. Smoky, tangy, hearty. Eaten on tostadas with mayo and an ice-cold beer.

- 500g smoked marlin, shredded (discard the dark, reddish parts)
- Juice of 10 limes
- 1 red onion, half diced finely, half cut into wedges
- 4 Roma tomatoes, cut into wedges
- 4 carrots, peeled and grated
- 1/2 bunch cilantro, chopped
- 2-3 tbsp ketchup (less-sweet variety)
- Drizzle of olive oil
- Huichol sauce or other hot sauce, to taste
- Salt, black pepper, dried oregano
- 2 ripe avocados, diced
- Tostadas and mayonnaise, to serve
