- 100 g achiote paste (or ground annatto seeds)
- 1/2 tablespoon ground cumin
- 1 teaspoon Yucatecan oregano
- 12 whole black peppercorns
- 2 whole allspice berries (pimienta gorda)
- 3 large garlic cloves, peeled
- 2 dried chiles serranos yucatecos (or chile de arbol as substitute)
- 1/2 cup sour orange juice (or substitute)
- 1/2 cup water
- 2 tablespoons white vinegar
