  • 1 red onion, finely diced
  • 2 to 4 chiles habaneros, finely chopped (seeds in or out, your call)
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour orange juice (or 1/4 cup orange juice + 1/4 cup lime juice as substitute)
  • Salt to taste
